Sous vide techniques for cooking with and without equipment.
How do you like your steaks?
We like them juicy and melt-in-your-mouth tender—and cooking with sous vide (pronounced sue veed) is the best way to cook your desired steak. It is a cooking technique that has been used in professional kitchens for years. Now, many home cooks are trying the technique.
The best part: it is pretty easy to do at home! All you need to do is heat water to the corresponding time and temperature for your steak’s desired doneness.
WITHOUT FANCY EQUIPMENT
What you will need
- Deep pot
- Plastic bag (a Ziploc bag or something similar)
- Pan
- Thermometer (optional)
How you do it
- Fill your pot with enough water to cover your steak
- Mount your thermometer in your pot (or just test your water every now and then)
- Heat the water. Your goal is to get the water to a steady heat so don’t worry if this takes a while
- Season your steak
- Place your steak in a plastic bag, leave it open and place your bag into water (before you close it!). This will make sure that all the air is sucked out of the bag before you close it. Check the technique here
- Set a timer and cook your steak until your desired doneness
- When your steak is done, sear it in a hot pan to get a golden crust
- Enjoy!
This may take some practice so don't get discouraged. We learned through our mistakes hehe.

What you will need
- Sous vide precision cooking device. The device will circulate the water and heat it for you—you will not need to use your stove. You can purchase something like this.
- Vacuum seal bags and vacuum sealer. Foodsaver has a ton of options.
- Deep pot
How you do it
- Fill your pot with enough water to cover your steak
- Place your sous vide precision cooking device in your pot
- Set your sous vide precision cooking device to the temperature that fits your desired doneness
- Season your steak
- Place your steak in the vacuum seal bag
- Vacuum seal the steak using your vacuum sealer
- Set your cook time on your sous vide precision cooking device.
- If you want a golden crust on your steak, finish it in a hot pan when your steak is done cooking.
