Bessie works with Umomundo to source ahi tuna (also known as yellowfin tuna) from Pesca Azteca and Cod. Ahi tuna and cod isn’t native to Canada and they are imported from Mexico and Alaskan respectively.

The Pesca Azteca crew and ground personnel have received permanent training over the years to meet strict standards that respect the environment and the ecosystem: complying with Mexican environmental legislation, the guidelines of the IATTC (Regional Organization for Fisheries Management of the Eastern Pacific), the subscription to the AIDCP (Agreement on the International Program for the Conservation of the Dolphin) and the philosophy of Pesca Azteca, based on the FAO guidelines and MSC (Marine Stewardship Council) principles.

"Our fishing method is based on the capture of adult yellowfin tuna with average weights of 20kg per piece, through the search, location and capture of the school of mature tuna, guaranteeing the sustainable reproduction of the species."
